Food production has its own unique way, which is characterized by: the production equipment is in contact with water and has a high humidity; it is often operated at high or low temperatures, and the equipment is in a working environment with large temperature difference; it is in direct contact with food and corrosive media,the equipment material wear and so on. Therefore, unlike general industrial heat exchangers, heat exchangers for food industry should have their own characteristics and requirements in design, manufacture and operation. Materials in direct contact with the product (food) should be stable and should not contain elements that are harmful to human health or chemically reactive with food. The material that normally touches the side of the food is made of stainless steel. Non-metallic materials such as gaskets and seals must be in accordance with the requirements of the food medium for sanitary quarantine and the relevant provisions of the national health and quarantine authorities.
